Daytona Beach - April 6-13

Saturday, April 6
We arrived in Daytona Beach around noon on Saturday, a little early for our 4 PM check-in to the Sunrise Beach Club.  When we went to the office, they told us that our room would probably be ready around 2:00 so maybe we could get lunch and come back later.  We decided to take a walk along the beach to a restaurant down by the Boardwalk.   This is the first time we were on a beach where cars could drive on it and park.
 This clock is on the Boardwalk and instead of numbers it says Daytona Beach.


We went down to Joe's Crab Shack but after looking at the menu there wasn't anything I wanted to eat so we started walking back along the street thinking maybe we would find someplace else to eat.
We found a rib place that looked good, at least popular, but there was a long waiting line so we kept moving. We were dragging for the last few blocks, couldn't figure out why. When we got back to the car we decided to go over to the plaza where Publix is and we could get a sandwich there. Instead, there was also a Subway in the plaza so we got a chicken sandwich to take back with us hoping we could check in. We were able to check in and after unloading the car we enjoyed our sandwich with chips and sodas.  Below is a collage of our place, quaint and cozy.

Then we both collapsed. We had tickets for Once Upon a Mattress at the Daytona Playhouse. After taking naps we went to a Contemporary Worship Mass at Our Lady of Lourdes which was only a few blocks from the playhouse and barely made it to the play in time.

Sunday, April 7
The weather was a lot better today.  We went in the hottub,
took another beach walk, this time going North instead of South.

Saw my favorite crested seagulls

and although we walked just as far today as yesterday we were wide awake.  In fact, so wide awake that we didn't go to sleep until around 2 AM.  Larry was reading a good book and I was doing something on the computer.

Monday, April 8
The weather continued to improve.  We took a walk along the beach south again and came back and enjoyed the hottub and pool.


 They do a really good job of patrolling on the beach.
 Good day for a shadow picture, but since it was noon our shadows were pretty tiny.
I went to Beall's Outlet, my favorite place for under $10 sunglasses and also found a pair of pants.  A stop at Publix and then the ABC store, Absolute Vodka 2/$55 and back home 3 hours later.

Tuesday, April 8
Today was the best weather day so far.  We got an earlier start and went into historic Daytona Beach and to the Angell & Phelps Chocolate Factory and did the tour.
After walking around the town we went to the Dunlawton Sugar Mill Gardens, an old sugar mill (and not a very successful one) in the 1800s.  The Indian attacks had something to do with that.

 They had a human sundial.
 Just need to add an hour for DST
 It went from being a sugar mill to a tourist attraction and Botanical Garden after WWII complete with dinosaurs.



A quick stop at Publix on our way back, 6 bottles of Schweppes Diet Tonic (yay!!!) some down time and then I went to yoga at the recreation center across the street and Larry did Tai Chi and went in the pool and hottub while I was there.  I did a little hottub when I came back and what do you know, it was Happy Hour!  Tomorrow we have a tour booked in St. Augustine for 11:00 so no hanging around all morning watching my favorite morning TV shows.

Wednesday, April10
We had reservations for an 11:00 AM tour in St. Augustine this morning so I was almost  ready to go by 9:00.  Just as we were on our way, I got a text from Peter, the tourguide and owner of Gold Tours, who said that he could take us 1/2 hour early because his other people from our group were going later.  We were able to get there at 10:30 and had a private tour.
This was a sulfur pond, pretty stinky but supposedly healthy as Peter put some of the water on his achy knees.
 This is Magnolia Street.  After all the magnolia trees died they were replaced with oaks.
When it was built, the room below was the worlds largest indoor swimming pool in the Flagler Alcazar Hotel.  Now the hotel is the Lightner Museum and the pool hosts a cafe.
Flagler built this church in memory of his daughter who died following complications from childbirth. 
After our tour we walked around Old Town and ran into Iris and Rob from Rochester on the second floor of  the Miguel O'Reilly House Museum. 
After wandering around some more we decided to head back and find someplace to eat on the way. After looking at several menus, and rejecting them, I found a place that suited me. I had a 19 PP meal and it was worth every single point.
 I had a pint of Highland Gaelic Ale and Larry had the Guinness
 8 oz Angus burger with Gorgonzola cheese and a toasted ciabatta bun.  I didn't eat any of the fries which would have added a zillion more PP.
We drove back along A1A and decided to skip our beach walk but we did go in the hottub.  We also skipped dinner but did have a 0 PP fruit plate.

Thursday, April 11
A lazy day. We took a walk on the beach toward the boardwalk so I could take pictures of where Laura stayed when she came down here when she was in college.  When she came it was the Whitehall Inn then it became a Radisson and now it's the Plaza Ocean Club.

There was a Cheer and Dance competition going on so the town was filled with college students that were there for that.


 We were glad to be in Daytona Beach rather than at home.

Friday, April 12
I went to WW for my monthly weigh in (and was at goal!!).
This was the warmest day of the week.  It was cloudy all day but nice and warm. 

 It was the only day warm enough for us to sit outside for our cocktail.
 The next day we said goodbye to Daytona Beach.

Watermelon Cake

Looks like cake but 0 PP - it's watermelon

Directions: 
Cut the ends off the watermelon to form the top & bottom of the cake
Then cut away the rind from the sides of the cake.
Use cookie cutters to cut cantaloupe flowers and honeydew leaves

Use toothpicks to attach to cake.
Decorate with additional strawberries, blueberries, apples, grapes, and oranges. 

Simple & yummy! 

Saw this on Facebook today and have to try it.  Pretty and healthy summer dish.

Orlando - April 2-6

We got to Vistana Villages, in Orlando around 4:00 pm on Tuesday and as we were unloading our car Audrey texted that they were at the gate.  No time to go grocery shopping before they got there so we waited for them to pull into the parking lot.

Audrey and I went grocery shopping and bought way too much food.  We put together appetizers and when we finished eating those we were too full to eat anything else.  Oh well, there was always tomorrow.

The next day Larry and Steve went to play golf and Audrey and I did yoga from a YouTube video and then went to the pool.  We planned on going in the hottub, but it was too hot and the hottub was too crowded.  Then we were bombarded by lots of bugs.  They looked like the love bugs we saw at the Villages last year, but these hadn't found love yet since they were all singles.  When the guys came back from golf I put together some appetizers for an early Happy Hour so we would have room for dinner.  I can't believe that the only picture I took while they were with us was this one.

Audrey and Steve visitied on the best days that we were in Orlando.  After they left on Thursday our weather went downhill.  It was cloudy and then rainy in the afternoon on Thursday.  In the morning we went to the Vineland Ave outlet mall that was practically around the corner.  Larry wanted to get a new battery and band for his watch so we went to the Timex store but it turned out to be a better idea to just buy a new watch since the watch he had needed to be returned to the factory for what he wanted.  Instead, it went to the trash!  I got three colorful tops at Talbots and really wanted to go back to the mall without Larry the next day since there were so many stores I wanted to still check out, but I never did.  probably just as well since I don't really need anything.
We got back to our place right before the rain started and we spent the rest of the day just hanging out inside.
On Friday we played some tennis in the afternoon, notice how well my new tote matched my shorts that I wore for tennis. 
It was cloudy but not wet, and I could feel all the potential places where I could be in pain the next day but I survived fine.

Friday night we watched two comedies on TV that we found by chance and really enjoyed them.  Stuck on You with Matt Damon and Greg Kinnear and then The Change-Up with Jason Bateman and Ryan Reynolds.  We laughed a lot.
When we left on Saturday it was sunny with blue skies, of course.

Calming Creamy Turmeric Tea


Dr. Sanjay Gupta's Calming Creamy Turmeric Tea

Ingredients
1 cup almond milk
1/2 tsp turmeric
1 tsp cinnamon
1 tsp honey
1/4 tsp ginger

Directions
Heat the almond milk in a microwave, stir in the spices and drizzle the honey on top. Enjoy!

I finished my car project today since it was cloudy this morning and we were just sitting around watching TV.
I thought I would have to go to Jo-Ann's to get a button which was the finishing touch but then came up with a homemade one and I even have another one to use for my going home tote project.

Day 3 - to Orlando

We left at 8 for an 8 hour drive to Orlando. We finished yesterday's book before we got to 95. Now we're listening to Clive Cussler's Devil Gate.
Lots of exits with Exxons in SC but not GA.

Day 2

Leaving Fredericksburg, but first a stop to top off the gas. On the road at 9:23 and another 6 hours of listening to Harlan Coben's Miracle Cure.



Just entered North Carolina, 11:20 and it's 63 degrees and sunny, LOVE IT!!!



At 2:02 we entered South Carolina and it was
72 degrees. By the time we got to Myrtle Beach it was 79.


Once we checked in we got into our bathing suits and went to the hot tub. It was crowded out there, unlike the last time we stayed at the Sheraton in October 2011 when we had exclusive use of any of the 3 hot tubs.


We also opted out of going to Nacho Hippo for dinner since Larry suggested it would probably be crowded with so many kids down for school break so we decided to eat the other container of soup. But since it was still so nice out we went to the pool bar for Happy Hour.

Day 1 - Off to Fredericksburg

At 1:07 it started to rain hard. It's been lightly raining for a couple of hours but now the sky opened. I checked the weather for Fredericksburg and it said 90% chance of rain

For gas go past first exit with Exxon towards Harrisburg and there's another right past where we need to make a left onto 83

Got to the Marriott Towne Place Suites around 5:30 after a little traffic delay. Settled in with our cooler and backpacks and heated up some frozen homemade soup from home. I took 2 containers of frozen soup and one of applesauce as well as 2 blue freeze packs and everything was still frozen solid when we arrived.

Since we got up so early this morning we fell asleep early too. Only bad part was we both woke up around 1:30 in the morning and were awake for quite awhile. I even listened to 3 episodes of Bored Stiff on my phone (HBO GO)

Visit to Laura and Greta

I went to Laura's on Saturday after postponing the departure date twice.  Once because Nadine had to change her date to visit Em because she (Nadine) hurt her back and then because there was an East Coast snowstorm on Friday.  I left Saturday morning and had perfect driving weather.

It was going to be a short visit because I was leaving on Monday but was able to accomplish my main objective which wa to organize Laura's bathroom closet.  I forgot to take a before picture but the after looked really good.
She made a creative recipe called turkey burger salad which was so delicious we had it Saturday and again Sunday, made from scratch both days.


We Skyped with Myles before he went to the second day of his diving meet at West Point and went to Zumba.

 When Laura was cleaning out her boxes, she came across Mr. Wonderful.



My few days at Greta's I hung out with Tucker who had off from school that week.  We played a bunch of Yahtzee games, went to lunch at McDonald's and of course he got some play time on my iPhone and iPad.  His favorite app this visit was FatBooth and he took these pictures.  Well, I took the one of him.


On Wednesday, I met Greta in the city.  She had an after work function so I wandered around H&M and Bloomingdales until we met up at Starbucks and then stopped for dinner before catching the train home.

The next day I left around 11:30 after Bev came back from her doctor's appointment and had a good drive home.

Blueberry Lemon Walnut Bread

I found this recipe on a bag of Southern Grove Walnuts that I bought at Aldi's.  Since I didn't have any lemons but did have a lot of oranges I substituted everything lemon with orange.  It reminded me of the Orange Kiss Me Cake which I still have not made since I came across the recipe.

BLUEBERRY LEMON WALNUT BREAD
Yield: 12 servings

1 cup shelled walnuts, chopped
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup granulated sugar
2 tablespoons lemon zest
3/4 cup buttermilk
2 eggs
1 teaspoon pure vanilla extract
2 tablespoons melted butter
2 tablespoons canola or vegetable oil
1 cup blueberries

Glaze:
3 tablespoons granulated sugar
2 tablespoons freshly squeezed lemon juice

  • Preheat oven to 350 F.
  • Spread a single layer of walnuts onto a baking sheet. Toast walnuts in preheated oven for 10 to 12 minutes (until light brown) then let cool.
  • Using a whisk, mix all-purpose flour, baking powder, baking soda and salt in a large bowl.
  • Using a whisk, mix sugar, lemon zest, buttermilk, eggs, vanilla, melted butter and oil in a medium bowl.
  • Pour liquid ingrediens into a pit created in the center of the dry ingredients and lightly combine. Take care not to over mix. Introduce chopped walnuts and blueberries by folding into mixture.
  • Flour and grease an 8 x 4 (I’d use a 9 x 5) loaf pan. Spread mixture into prepared loaf pan.
  • Bake for 55 minutes to 1 hour (If using a tester, insert into center, baking complete when tester comes out clean). When finished baking, let cool for 20 minutes on rack, removing from pan and cool to room temperature.
  • To create a glaze, add sugar and lemon juice to a small saucepan. Boil over high heat, then reduce. Stir until sugar has dissolved. 
  • Brush on glaze while bread is still warm.

Annie

We went to Pittsburgh this weekend to see Kris and family and see Claire in Annie.  We went down on Saturday and came back on Sunday and were happy to have good weather both ways.  Kris made one of her usual spectacular breakfasts on Sunday.
She had also made chex mix, a sweet batch and a savory batch.  I loved the sweet one but I better lose 5 pounds before I make it because it is addicting.

Chicken Curry Soup



I made this soup today using leftover chicken breasts from store bought roasted chicken.  I added it during the last 10 minutes of cooking time druing Step 2.

Chicken Curry Soup

6 servings, 1 1/3 cups each

Active Time: 45 minutes
Total Time: 45 minutes

Ingredients
    1 tablespoon canola oil
    1 large onion, chopped
    4-5 cloves garlic, crushed
    3 slices fresh ginger, peeled and lightly crushed
    3 tablespoons curry powder, preferably Madras
    1/2 cup white rice
    2 bone-in chicken breasts, (about 1 pound), skinned and trimmed
    4 cups Homemade Chicken Broth, (recipe follows) or reduced-sodium chicken broth
    3 cups water
    1 vine-ripened tomato, seeded and chopped
    Salt & freshly ground pepper, to taste
    Lemon juice, to taste
    Finely chopped fresh cilantro, or chives for garnish

Preparation
  1. Heat oil in a Dutch oven or soup pot over low heat. Add onion, garlic and ginger; stirring occasionally to prevent browning, cook until the onion is soft and translucent, 5 to 7 minutes. Add curry powder and rice; cook for 5 minutes longer.
  2. Add chicken, broth and water. Bring to a boil, then lower heat to medium. Simmer, stirring frequently, just until the chicken is no longer pink in the center, about 30 minutes. Transfer the chicken to a plate to cool. 
  3. Puree soup in batches in a food processor until smooth, adding water as needed for a creamy texture. Return soup to cleaned pot and heat again to a simmer.
  4. Shred the chicken into small strips and add to the soup along with tomato; cook 3 minutes more. Season with salt and pepper.
  5. Just before serving, stir in lemon juice. Ladle into bowls and garnish with cilantro or chives.

Per serving: 197 calories; 5 g fat ( 1 g sat , 3 g mono ); 37 mg cholesterol; 21 g carbohydrates; 17 g protein; 2 g fiber; 176 mg sodium; 271 mg potassium.

Garam Masala

Easy Garam Masala

Ready In: 5 Minutes
Servings: 12
"This recipe produces a quick version of Garam Masala, the aromatic blend of spices often used in Indian cooking."
INGREDIENTS:
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
DIRECTIONS:
Mix cumin, coriander, cardamom, pepper, cinnamon, cloves, and nutmeg in a bowl. Place mix in an airtight container, and store in a cool, dry place.

Ingredients:

1/3 cup cumin seeds (jeera), 40 gram
2-1/2 tablespoons black pepper (kale mirch), 20 gram
1/4 cup whole black cardamom (kali ilachi), 20 gram
2-1/2 tablespoons cinnamon powder (dal cheene), 20 gram
1 cup packed bay leaves (tajpat), 20 gram
1/4 cup cloves (long), 20 gram
2 teaspoons mace powder (javantri), 8 gram
2 teaspoons nutmeg powder (jaiphal), 8 gram

Method

Mix all the spices and grind to a powder. Store the Garam Masala in air tight glass container. I use powdered cinnamon, mace, nutmeg, and black pepper because most home blender are not powerful to properly blend these spices.

All of the spices used in Garam Masala are strong in flavor and have warmth. I prefer to sprinkle Garam Masala to a dish to give it a finishing touch.

1880 House

We went on a Hugger trip this weekend to the 1880 House.  First time since 2006 and we had a really good time.  We got the cute little Annex next door all to ourselves.

Because of the weather forecast, we went up a day early and were able to go XC skiing on Friday
and then try out our new snowshoes on Saturday when it was beautiful and sunny.  It was the girls and Larry.  Obviously Larry took this picture.
 Here he is being our trailblazer.


Linda got a new cat, Teeka, since we were there last and just love his Buddha pose.
We didn't get as much snow up there on Friday as they did back in Webster but probably 6-8 inches but we did have a bit of excitementwhen the snow started coming down and the roads were slippery.  Some poor 17 year old boy who was driving an impenetrable truck skidded up the front steps and was stopped by the house.  No one was injured and the truck didn't even look dented but a storm window was broken and a lamppost knocked down.

Super Bowl Football Cake

When I asked what I should bring to her Super Bowl Party, and Patti said "you’re my go-to sweets girl so a dessert would be good,"  I wanted to make something chocolate and when I went to Wegmans and walked past the bakery department and saw this cake for $12 I thought,


"I can make one that
looks better than that!"

 I used a Devil's Food Cake mix (a little lazy here) in 2 - 9 in cake pans

and the buttercream frosting recipe from here  (YUM, YUM).  After creaming the butter and sugar I took out 1/2 cup to leave white and then continued with the chocolate using the same proportions as if that 1/2 cup was still there.

To shape the football
1- make sure that 1 of the halves is flat on top (while still warm, lightly press down with a towel to flatten)
2 - when completely cool and ready to frost, stack the halves with flat one on top and cut in half through both

3-frost the inner halves and put together
4-frost the outer ones and add to the inner
5-Trim ends to shape for football, pressing sides together to make it more compact.
6-Move to the serving dish before frosting the top and sides
7-Add cream/milk to the white frosting and more sugar to get desired amount and consistency
8-pipe through a cake decorator to get the desired trim
I added some team emblems for the party and strawberries around the side.
 Go Ravens!!

Lentil/Moroccan Stew

My favorite meal the last few months at Penfield CC is their Lentil Stew. I think I have finally figured out a way of making it by using a couple of different recipes I have.

The main ingredients in this recipe are couscous, lentils, chickpeas and carrots.  Omitting the chicken would make it a vegetarian meal.

Ingredients:
1 tblsp olive oil
2 chicken breasts, cut in pieces
3 cups carrots, diced
2 large onions, chopped
2 cloves garlic, chopped
3/4 cup lentils
1 cups Israeli (pearl) couscous
1 can chicken or vegetable broth
1 can diced tomatoes
1 can chickpeas
4 tsp ras el hanout (see here --> Moroccan spice blend)
baby spinach (if desired)
cilantro (if desired)
Feta cheese


Heat the olive oil in a saucepan.
Pre-cook the chicken either by sauteeing it in the olive oil or boiling or roasting.
Saute the onion, carrots and garlic in saucepan until onions become transparant.
Add the spices and lentils and mix to coat everything.
Add the broth and chickpeas (with liquid).
Bring to a boil, cover, reduce heat and simmer for about an hour.
Add tomatoes, chicken and couscous and cook for 20 more minutes until couscous tender.
Add the spinach for the last 10 minutes,
Add more liquid if needed while cooking.

Can add cilantro and feta cheese before serving.

Chocolate Buttercream Frosting

I haven't made home made chocolate frosting in ages so I looked up some recipes and came up with this one that I'm going to try.  I always used milk not cream but since we only have skim milk I might try some cream with this.

Chocolate Buttercream Frosting
Prep time: 2 mins
Cook time: 3 mins
Total time: 5 mins
Serves: 3 cups

A simple recipe for classic chocolate buttercream frosting. Perfect for frosting cakes, cookies, brownies, or cupcakes.

Ingredients
1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted!)
3 1/2 cups confectioners (powdered) sugar
1/2 cup cocoa powder
1/2 teaspoon table salt
2 teaspoons vanilla extract or 1 teaspoon almond extract
4 tablespoons milk or heavy cream

Instructions
Cream butter for a few minutes in a mixer with the paddle attachment on medium speed.
Turn off the mixer.
Sift 3 cups powdered sugar and cocoa into the mixing bowl.
Turn mixer on the lowest speed (so the dry ingredients do not blow everywhere) until the sugar and cocoa are absorbed by the butter.
Increase mixer speed to medium and add vanilla extract, salt, and milk/cream and beat for 3 minutes.
If frosting needs a more stiff consistency, add a little more sugar.
If frosting needs to be thinned out, add additional milk 1 tablespoon at a time.

Ras El Hanout

I found a bunch of recipes for this spice and picked the ones I wanted and used this in my Moroccan Lentil Stew

My recipe:
Ingredients:
    •    1 tsp coriander
    •    1 tsp cinnamon
    •    1 tsp cumin
    •    1 tsp turmeric
    •    1 tsp ginger
    •    1 tsp cardamon
    •    1/2 tsp cayenne pepper
    •    1/2 tsp black pepper
    •    pinch of saffron

Preparation:
Mix all ingredients together

    •    2 teaspoons ground ginger

Use Ras El Hanout to season tagines, stews, meat, poultry, fish and vegetables. It keeps well for several months.

    •    1 1/4 teaspoons ground nutmeg
    •    1 teaspoon ground allspice
    •    1/2 teaspoon ground cloves
