Moroccan Spice Blend
I found a bunch of recipes for this spice and picked the ones I wanted and used this in my Moroccan Lentil Stew
My recipe:
Ingredients:
• 1 tsp coriander
• 1 tsp cinnamon
• 1 tsp cumin
• 1 tsp turmeric
• 1 tsp ginger
• 1 tsp cardamon
• 1/2 tsp cayenne pepper
• 1/2 tsp black pepper
• pinch of saffron
Preparation:
Mix all ingredients together

Ingredients:
• 2 teaspoons ground ginger
• 2 teaspoons ground cardamon
• 2 teaspoons ground mace
• 1 teaspoon cinnamon
• 1 teaspoon ground allspice
• 1 teaspoon ground coriander seeds
• 1 teaspoon ground nutmeg
• 1 teaspoon turmeric
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground white pepper
• 1/2 teaspoon ground cayenne pepper
• 1/2 teaspoon ground anise seeds
• 1/4 teaspoon ground cloves
Preparation:
Blend all of the spices in a bowl. Transfer to a glass jar, and store in a dry, dark place.
Use Ras El Hanout to season tagines, stews, meat, poultry, fish and vegetables. It keeps well for several months.

Ingredients:

• 1 teaspoon ground ginger
• 1 teaspoon salt
• 3/4 teaspoon freshly ground black pepper
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon ground coriander seeds
• 1/2 teaspoon cayenne
• 1/2 teaspoon ground allspice
• 1/4 teaspoon ground cloves
Preparation:
In a small bowl whisk together all ingredients until combined well. Spice blend keeps in an airtight container at cool room temperature 1 month.
