Remembering Scoop

It was another sad day.  We lost too many friends this year.  Scoop passed in April just a few days after Steve and Marcia had a memorial service for him here in August.

Rochester - On April 27, Scoop passed away in Naples, FL at the age of 81. He was born on 4/24/38 to Mary and Maurice Hyde of Rochester. He attended Aquinas and The Allendale School graduating in 1956 and LeMoyne College in 1960. He owned and operated Foreign Auto Parts Ltd. for 25+ years and retired from RCR Yachts as a yacht broker. It was his favorite job, as his passion went from cars to boats. He sailed and raced his boat, Dr. Jekyll out of RYC where he was a member for 30 years.

He leaves behind his loving wife of 53 years, Marcia (Kubarek) Hyde, his son Timothy Hyde of NC, sisters Nancy Ringelstein of CA and Carol Bonczyk of Rochester, grandchildren Ashley and Morgan Hyde of NC and Nathan and Lindsay Bevilacqua of CO, brothers-in-law Alan and Ronald (Hedy) Kubarek, son-in-law Chet Bevilacqua of CO, and many dear cousins, nieces, nephews and friends.He was pre-deceased by his brother Maurice "Skip" Hyde, brothers-in-law Paul Ringelstein, John Bonczyk and adored daughter Jennifer Bevilacqua .

A Memorial Mass to celebrate Scoop's life will be held at Spiritus Christi Church, 121 Fitzhugh St, 14614 at 10 AM Saturday, September 14. In lieu of flowers, donations may be made to St. Jude Children's Research Hospital https://www.stjude.org/The Michael J. Fox Foundation https://www.michaeljfox.org/ or a charity of your choice.

Muesli


Larry found this recipe and it is the best recipe I've made to mimic the muesli that is on cruise ships.  Thank you Viking.

Viking Organic Muesli

Ingredients
2 C (160 g) organic rolled oats
1 C (237 ml) organic low fat milk
1 T (21 g) organic honey
1 lg organic apple
¼ cup (29 g) organic walnuts, chopped
¼ cup (38 g) organic raisins
1 C (28 ml) organic low fat yogurt, any flavor

Directions
Combine oats, milk and honey in a large bowl, stirring until mixed well. Cover; refrigerate overnight. Before serving, peel, core and grate apple and stir into oat mixture along with walnuts, raisins and yogurt.

Prep time: 6 minutes. Chill time: overnight. Makes 4 servings.


NOTE: 
I initially make it with all the ingredients except the walnuts.
It tastes better the longer it sits.
When you want to eat it, add the nuts and more milk to the desired consistency.
Fresh fruit such as blueberries and strawberries are good to add too.

Be creatuve with the ingredients.  Add craisins/any dried fruit with or instead of raisins

How Long Do I Roast Vegetables?

Approximate cook times you’re looking at for roasted vegetables (cut into 1-inch pieces. I use about 1 – 2 lbs) at 400 – 425 degrees (don’t forget to toss halfway):
  • Asparagus – 20 minutes
  • Bell Peppers – 20 minutes
  • Broccoli – 25 minutes
  • Brussels Sprouts (halved) – 25 minutes
  • Butternut Squash – 30 minutes
  • Cabbage (cut into 1-inch thick slices) – 30 minutes
  • Carrots (cut into 1-inch chunks or baby carrots)- 30 minutes
  • Cauliflower – 25 minutes
  • Corn (cobs left whole with husks) – 40 minutes
  • Green Beans – 20 minutes
  • Kale – 15 minutes (it doesn’t need to be in a single layer)
  • Onions – 35 minutes
  • Potatoes (russet, red, yukon) – 45 minutes
  • Sweet Potatoes – 30 minutes
  • Tomatoes (grape or cherry) – 15 minutes
  • Yellow Squash – 20 minutes
  • Zucchini – 20 minutes

Try this corn on the cob

This is great. Simple is helpful most days! I put the corn in the pan of water pre boil without removing the husks prior. Nor do I add salt or sugar. I leave it in 5 to 10 minutes after it starts boiling. After it's done they come off so much easier and it is cooked perfectly, and I don't need to rush. I then put corn on an oven tray with a little bit of spices and butter for about 5 minutes on 350°. The corn is absolutely perfect. That was an accidental find because I was reheating it. It tasted as awesome as your mother or grandmother or whomever used to make!

Saying Goodbye to Kay

Two weeks ago we had bridge at Jackie's new house.  I sent a note to Kay and Beth to tell them that I wouldn't be able to pick them up because golf was starting or me that day.  Kay responded that she didn't know if she was going to go because her meds got changed and she had to see how she was doing.  At bridge Beth said that Kay had contacted her and that she wasn't up to playing and didn't need a ride.  On Thursday, May 20, Jackie sent a note that Kay had texted her and said she was going into RGH.  June 1 she was gone.

Kay was the one who became the self appointed sunshine girl of our bridge group always remembering everyones birthday.  She was always smiling and I never heard her complain about anything.  I always thought she was one of the healthy ones as everyone started having ailments and body replacements but then she had congestive heart failure and had to have 24/7 oxygen.

Webster - Predeceased by her husband, Joachim A. Ritter. She is survived by sons, Benjamin and Michael (Meredith); grandchildren, Allison, Avery and Norah; sisters, Margaret (Robert) Widlund, Ruth (Bruce) Brown; nephew, Ryan Brown, niece, Beth Brown, cousins, friends, and family.

Kay was born in a small town, but had a unique combination of knowledge along with worldly wisdom. She was salutatorian of Watkins Glen High School in 1959, and graduated cum laude with a bachelor degree in mathematics from Nazareth College in Rochester, NY. Kay began her career breaking the glass ceiling at Kodak as a systems analyst until she embarked on a long journey as a wife and mother. Later, she returned to the workforce as an invaluable office manager at Cuyler Associates in Webster, NY.

Kay treasured her long-standing tradition of playing bridge with two different groups of friends: Nazareth buddies and the Kodak girls. She always had a keen sense of etiquette and was never afraid of standing up for herself or her family when needed. Kay provided unyielding dedication and sacrifice to her husband and children, and she loved her grandchildren dearly.

Friends may call Tuesday, June 4 from 4-7 PM at the funeral chapel (1031 Ridge Rd., Webster). A Funeral Mass will be held 10 AM Wednesday, June 5 at St. Paul's Catholic Church, 783 Hard Rd., Webster. Private interment at St. Mary's Cemetery in Watkins Glen.

Can't believe Steve is Gone

We were on our TA/British Isles cruise and on an excursion in Lisbon which had Wifi access. I was looking through my emails and saw an email from Audrey saying that Steve had passed away the day before.  What a shock.  he wasn't sick and they had just moved into a new house in Delaware.

Robert Steven "Steve" Bonnett, age 73, formerly of Pittsburgh, PA, passed away on Wednesday, April 24, 2019, at Beebe Healthcare, in Lewes, DE. He was born on May 22, 1945 in Cincinnati, OH, son of the late Edward N. and Virginia D. (Henderson) Bonnett.

Mr. Bonnett was a graduate of Shaler Area High School in Glenshaw, PA. He then went on to earn a Bachelor of Arts Degree from Marietta College in Marietta, OH and a Juris Doctorate Degree from University of Virginia School of Law. Mr. Bonnett built a career as an attorney in such firms as Manning and Napier in Rochester, NY as Executive Vice President of Exeter Trust Company, PNC Securities Corporation in Pittsburgh, PA as Senior Vice President and Chief Administrative Officer, and PNC Bank in Pittburgh, PA as Vice President of the Trust and Investment Division.

He was an avid Pittsburgh Steelers fan and also enjoyed golf, traveling, and watching his grandchildrens' various sporting events, traveling frequently to cheer them on for hockey and lacrosse games. Mr. Bonnett was a founding member of the Cummerbund Society, which supported the Neonatal Care Unit at Magee-Women's Hospital in Pittsburgh, and was President of the Board of Directors for Big Brothers and Sisters of Greater Pittsburgh.

Above all, Mr. Bonnett cherished time spent with those he held dear. He was a loving and devoted son, husband, father, grandfather, brother, uncle, and friend who was loved by many and will be deeply missed by all who knew him.

In addition to his parents, Mr. Bonnett was preceded in death by his daughter, Heather Lynn Paul. He is survived by his beloved wife, Audrey (Fox) Bonnett; his son, Joshua E. Bonnett (Jessica Silver); his daughters: Sara E. Britt (Sean) and Kelly Paul Stucker (Fred); his grandchildren: IV Stucker, Olivia Stucker, Josephine Stucker, Heather Stucker, and Jack Britt; his brothers: David E. Bonnett (Dorothy), J. William Bonnett (Marsha), Michael Bonnett (Catherine), and Daniel Bonnett (Kathy); his numerous nieces and nephews; and his former wife, Cynthia Jackson.

A Funeral Service will be held on Saturday, June 29, 2019 at 10:00 AM, at Elfinwind Presbyterian Church, 3200 Mt. Royal Boulevard, Glenshaw, PA, where friends may visit beginning at 9:00 AM.

Chicken Pizza with Cauliflower Crust and Carrot Cake

On Sunday, in between making carrot cake for bridge the next day I made a chicken pizza

I had grape tomatoes so substituted them and made a cauliflower crust from this recipe

The edges of the crust got pretty brown when I cooked it because it was thinner but the rest was perfect.

The carrot cake I made was from Ina Garten but next time I would make half the amount or less of the frosting.


This is the recipe:
Prep: 10 min Cook: 1 hr 
Yield: 8 servings For the cake: (I would say 16 servings) 
2 cups granulated sugar
1 1/3 cups vegetable oil
3 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups plus 1 tablespoon all-purpose flour, divided 2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
1 cup raisins
1 cup chopped walnuts
1 pound carrots, grated
1/2 cup diced fresh pineapple 

For the frosting:  (This makes a ton of frosting)
3/4 pound cream cheese, at room temperature

1/2 pound unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1 pound confectioners' sugar, sifted 


For the decoration:
1/2 cup diced fresh pineapple 

Preheat the oven to 350 degrees F. 
Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans. 
For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer fitted with the paddle attachment until light yellow. Add the vanilla. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.


Add the dry ingredients to the wet ingredients. Toss the raisins and walnuts with 1 tablespoon flour. Fold in the carrots and pineapple. Add to the batter and mix well.


Divide the batter equally between the 2 pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely in the pans set over a wire rack. 

For the frosting:
Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined. Add the sugar and mix until smooth.
Place 1 layer, flat-side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. Decorate with diced pineapple.

Betsy is Gone

We lost Betsy very quickly.  Not knowing what was wrong with her, she was in the hospital where it was discovered she had cancer, brain and somewhere else.

She was in our bridge club for a long time and I used to drive her to bridge if I was able.

Webster, NY - Born 7/24/1937, died 1/30/2019. She is survived by her brother David. She graduated from Oberlin College with honors. Betsy had a long career at Kodak in Computer Technology. She was an avid bridge player and supported the arts.

There will be a celebration of her life on May 4th.

From the past

When we were at a craft sale about 5 years ago Larry thought this plaque would be cute in the kitchen.   I think he thought it represented me and of course I didn't.  I make all these homemade soups and bake banana bread and oatmeal cookies regularly.  Nevertheless, it sits on my stove.


I recently was looking for a recipe in Greta's Bridal Shower cookbook from 2003 and after reading the first paragraph I thought, "That sounds like that plaque on the stove.  But it did apply to me back then, maybe only a little now.
