And I'm just posting a recipe.

I saw this in People magazine and made it yesterday. We really liked it and when I was looking online for the recipe I found a similar one, also from Ina Garten but much simpler. I'm posting both here.

When I made the one from People I used a rotisserie chicken (she suggests that in the earlier version).

You can find the recipe below here

<span style="color: #3e8ede; font-family: ITCModernNo-216W01, "Times New Roman", Times, serif; font-size: 25px;">barefoot contessa <span id="top-tagline" style="color: #484848; font-family: "ITC Franklin Gothic LT", "Helvetica Neue", Helvetica, Arial, sans-serif; font-size: 15px;">| Find more great recipes online at barefootcontessa.com/recipes

<p id="recipe-meta" style="color: #484848; font-family: "ITC Franklin Gothic LT Condensed", "Helvetica Neue", Helvetica, Arial, sans-serif; font-size: 12px; text-transform: uppercase;">SERVES 6-8 | LEVEL: BEGINNER
<h1 style="color: #484848; font-family: ITCModernNo-216W01, "Times New Roman", Times, serif; font-size: 1.75rem; font-weight: 400;">Ramen Chicken Noodle Soup

3 tablespoons canola or vegetable oil

2 cups (1-inch) diced, scrubbed carrots (3 carrots)

3 tablespoons fresh ginger, peeled and minced

1 tablespoon minced garlic (3 cloves)

7 to 8 cups good chicken stock, preferably homemade

2 large cooked chicken breasts or 1 small rotisserie chicken

1 tablespoon soy sauce, such as Kikkoman

1 (3-ounce) package ramen noodles (discard the flavor packet)

8 ounces baby bok choy, leaves separated and cleaned

<div class="bd4 mb-10 EntryPost__text a-bc-blue" style="font-family: "ITC Franklin Gothic LT", "Helvetica Neue", Helvetica, Arial, sans-serif; font-size: 13px; line-height: 1.5; width: 525px;">
Heat the oil in a large, heavy-bottomed pot over medium-low heat. It was Sunday night, the end of the last of five sea days after leaving Maui. Tomorrow we were going to stop in Ensenada, a port city on the Pacific coast of Mexico's Baja California peninsula. We signed up for a tour that would take us around to some various sites including Margarita tasting and wine tasting.

That night when I went to bed, my last stop was to the bathroom. Larry was already asleep and when I went to flush the toilet I noticed that the water in the bowl was a lovely shade of pink. On a ship, it's hard not to notice what's in the bowl since you have to put the cover down in order to push the button behind it to flush.

At the time I didn't think too much about it. I knew it had to have come from me, even though I never saw anything like that before and the thought passed through my head that maybe it was from the 2 glasses of red wine I had at lunch that day. So I thought that maybe I should drink some water, but I never did. During the night when I got up it was this lovely shade of pink again. I'll think about it in the morning I said to myself and went back to sleep.

In the morning, it was still pink but it didn't upset me until I had to poop! Then the toilet bowl was filled with what I thought was bright red blood. I went out into the cabin and said, "Larry, I think I have a problem." "What is it," he said. "I'm bleeding internally," I replied.

When I googled it, the first thing I saw was how dangerous it was and someone could bleed out rapidly. I was going to need rapid medical attention. But where? On the ship? In Ensenada? I wasn't ready to die.

Then it said it is usually caused by trauma. I knew I didn't hurt myself except for the first day we sighted land going into Hilo. I leaned over the balcony railing and felt something pop in my ribs, like I pushed a little too hard. Could it have taken till now to cause an injury, it was 10 days later?

I then did decide to drink some water that I was going to do the night before.

The more I read the more I found that I didn't have any other symptoms such as headaches, dizziness, weakness and visual problems. Then I read some more causes and the one that clicked with Larry was too much alcohol. We had the drink package so of course we had to get our moneys worth but I don't think I had more than 4 drinks of anything on any day and that was over the entire day.

Since I didn't feel sick, my fear of immediately dying were going away but I was still concerned. We were meeting Margie and John (our traveling companions) for breakfast before the tour. They were in the cabin next to ours. Before going out I made one more quick stop to the bathroom and YEA!!! my urine was clear. That made me feel a whole lot better.

We went out and I told Margie and John what happened and we continued discussing my problem on the way to and at the breakfast table. Great breakfast conversation. Then Margie recalled that I had beets at lunch the day before and beets can turn your urine and stool pink/red. Well, as a matter of fact, I had beets 2 days in a row at lunch and they were a large serving, probably more than a 1/2 cup of sliced beets each day. Then I quickly looked up this beet theory and sure enough you can even use beets to track the transit time of your digestion.

We went on our tour and had a great day.

P.S. The following day we arrived in LA to fly home on the Red Eye. I felt like I was getting a cold and when we got home on Wednesday, April 20th, we both tested positive for Covid.

Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-29225224313332643512022-02-09T00:26:00.005-05:002022-02-09T00:26:54.570-05:00Getting Organized
Today I organized my sock drawers
<div class="separator" style="clear: both; A few days earlier I delivered 8 months worth of magazines that I hadn't looked at to the library. In addition to BHG, there was Martha Stewart Living and Vanity Fair and some AARP too.

I found some recipes and project that looked interesting so I thought I would put the links here just in case I actually want to make them some day. This is the link for BHG recipes online: https://www.bhg.com/recipes/

Swirled Garlic Herb Bread

Shawarma Casserole

Slow Cooker Ribollita

Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-28076936989682884152021-11-09T09:29:00.051-05:002021-11-18T15:25:50.646-05:00Greta's 50th Birthday - one month late
Laura and I visited Greta so that we could celebrate her birthday with her. This was the second time for Laura because John and Ann were there for Greta's actual birthday while Larry and I were in Hilton Head. Her family was thinking she had enough birthday celebrations already.

The first day we were there, Thursday, we sang happy birthday and had the cake.

On Friday we went into the city to visit Aunt Harrie. I was desperate (TMI??). While there, I got a text that the garage was full and they were going to find another one. As it turned out they found one a few blocks away and also found a fabulous restaurant for lunch - Jack's Wife Freda. We went to the one on 8th and 16th St. It was chilly out that day but this restaurant had outside seating with plastic around 3 sides and heaters over the tables. We were able to get a corner table so we were well protected and the food was great.

By the time we finished lunch it was perfect for getting to Aunt Harrie's at 3:00. We visited for 45 minutes, before she got tired. She's 102 and looked great. She was walking around when we arrived and looked like a teenager - well, maybe that's a bit of an exaggeration. Because of Covid, we wore out masks for the whole visit even though we'd all been vaccinated. I had already gotten my booster and Aunt Harrie was getting hers on Monday.

Saturday we hung out. When we visited Michael and Doris one year Michael had made these delicious muffins and this recipe was the base for them. It's been my favorite ever since.

<a href="https://1.bp.blogspot.com/-poOrnsHR8p0/YX8qIdzh5RI/AAAAAAAA1zk/rx2k3PWXzNgMqFCTco4_1JDzM_XFJRWFACLcBGAsYHQ/s2048/muffin%2B-%2B1.jpeg" style="clear: left; What a year it's been. On Monday, March 15 we get our second covid vaccine shot.
Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-71161396399824969032021-02-09T07:15:00.000-05:002021-03-01T07:15:56.681-05:00Now it's February
Well, I have to admit I have already failed as you can tell since my last post was Jan 3.

I did do a lot of those Yoga classes and did post on instagram consistently for a few days. But I have been walking every day even when the temps are in the teens.

We were finally able to get a covid vaccine appointment in Syracuse the day before we were going to leave for the auto-train to go to Florida. Now we decided to just stay overnight 2 days in Harrisburg on our way to Lorton, VA instead of driving back home and doing the same trip the next day. At least one shot before we go to that viral state is better than nothing.

We got to go snowshoeing twice already after not having any snow for the longest time. The first time was a perfect day.

Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-84436052541204554962021-01-03T10:11:00.001-05:002021-01-03T10:11:17.227-05:00Jan 3, 2021
So far, so good, but it's only day 2. I can already feel that I'm not going to keep it up. Too many things to do and not enough hours in the day. In face, I need to go back and look at yesterday to see what all my goals were.

So far I've done 2 days of yoga classes and posted 2 pictures on instagram. It's raining now so have a reprieve from walking for a while. I did send out some holiday greetings yesterday and felt good about catching up with that. Still have some more to do.
Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-24894275990311198832021-01-02T09:08:00.007-05:002021-01-02T09:19:19.965-05:00January 2, 2021
That was the first time I wrote 2021, when I put it in the title. It's hard to believe it's been 21 years since we were worrying about Y2K as the year 2000 was rolling around. I had my New Year's Eve party and Craig Erickson created a fireworks display for us in the backyard. Of course, I invited all the neighbors so no one would feel left out or complain. Y2K could have been the pandemic for that time. Now instead we have Covid-19.

Since March of 2020 everyone has been in a lockdown. We're like China always was, wearing masks. But we can't see anyone other than in our household unless we're outside. Now that it's January and cold it makes it a lot harder.

Today I'm starting a 30 day Yoga program online, I'm also going to post a picture, trying for a drawing, every day on Instagram, and of course keep up with my daily walks. In addition to that I'm going to try to keep up with this blog every day because since I haven't worked on my memoir I can at least keep a real time memoir going here. Next week I start Zoom ballet and tap.

That's not mentioning how I still want to go through everything in my office, downstairs bedroom and basement. We've been home for 9 months with basically nothing to do and I haven't done any of that. But for accomplishments, I have listened to lots of books, watched lots of movies and binge watched lots of shows on Netflix, Prime and Hulu, learned to play pickleball, played neighborhood bridge outdoors and met my Kodak bridge group on Zoom and then in the park every other week once the weather turned nice and Zoomed with my family everyday for the first two months and now about three times a week.

I even did a Zoom call at the end of 2020 with the Davis/Dwass relatives, most of whom I didn't know. They're from my grandfather's side of the family (my mother's father). I also heard from someone who is a distant relative from my father's father's side of the family. We never knew that grandfather since he and my grandmother divorced when my father was still a boy.

I still haven't sent out all my holiday greetings that I wrote on December 21. It seems that the more free time I have, the less time I have to do things (or do I just lack the initiative?). Of course, there are all those hours I waste surfing the web for things to buy that I don't need (one of the reasons I need to do a clean-up, I need to get rid of things) and of course all those interesting things to read. (9:19 AM)

Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-83499789213887501402020-12-29T08:34:00.005-05:002020-12-29T08:34:49.893-05:00You think the mail is slow this year?
Today, Dec 29th, in my informed delivery email from the USPS I see that we are finally getting my sister's Christmas card that she mailed on Dec 16th.

Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-13911275688711801242020-11-21T21:10:00.005-05:002020-11-27T08:39:25.952-05:00Pretzel Salad
I must not have made this recipe since I started my blog because it wasn't on here. Laura is making her first Thanksgiving dinner this year - it's called "Thanksgiving in the Times of Covid" and wanted to check some things about the recipe which was in Greta's bridal shower cookbook. So now I'm adding it and maybe I'll make it again because it is SO delicious but it will have to be when there's more than just Larry and I to eat it. From her early days, Risa had a passion for the performing arts and learned to play the piano, flute and French Horn. Risa attended the New York City High School for the Performing Arts.

Risa met her future husband, Calvin Greenfield, at a fraternity party on her 18th birthday (1967). Risa (and Calvin) broke curfew on their first date where Calvin walked her home due to lack of bus fare. When they arrived at 2:30am they were greeted by Sylvia as she was getting ready to go work at the family bakery. Even though they almost didn’t see a second date, Risa and Calvin joined hands in marriage on May 3, 1970 and enjoyed 50 years together. Risa and Cal purchased a home in Goshen, New York where they began to raise their daughter (Abbe) and son (Andrew).

The family moved to Miami, Florida (1980) where Risa continued to excel as a wife and mother. Risa was the best mom to her children, always taking them to practices and attending dance recitals and baseball games. She was loving, nurturing, and giving not only to her children but to all the neighborhood kids who lovingly referred to her as MOM. Risa always greeted the kids with a smile and her loving nature when they entered the Greenfield house. Participating in the PTA and making sure the kids were always encouraged to learn and grow, she further assisted supporting the family as a bookkeeper, including working with Calvin in the family accounting/bookkeeping business.

Risa continued to have a strong passion for classical music, Broadway, and creating beautiful pieces of needlework throughout her life. Family was first for Risa and she lived to make others happy and share her love with them. Her family is grateful for the time they had together and will always remember receiving her unconditional love, her warm touches, loving advice, her shoulder, macaroni and cheese, and baked treats. They take solace in that she will be able to watch and enjoy from above while catching up with those that meant so much to her.

Risa lived her life always giving of herself to her family. She was a loving sister to Michael, proud mom to Abbe (Cameron) and Andrew (Michelle), and devoted Gram to Jake and Emma.

And even though we know how very far apart we are, it helps to think we might be wishin' on the same bright star.

Far beyond forever, you’ll be ours. No one else could love you more.

In remembrance of Risa and in lieu of flowers, please make donations in her name to Treasure Coast Hospice at treasurehealth.org. The shot felt more weird than I remember going into my muwcle but the bad part was that 3 hours later I felt like I had damaged my shoulder in some way. I couldn't figure out why it was hurting so much or why it was so hard to move my arm. About a half hour later I remembered I had gotten that flu shot.

When I came home I asked Larry if his arm hurt and it did in the same way. I usually feel a little sore after but he doesn't. Now we both did. Hoping it will go away in a few days and not turn into a case of SIRVA which I never heard of until I looked up shoulder pain after flu shot.
Barbhttp://www.blogger.com/profile/16125825265732598226noreply@blogger.com0tag:blogger.com,1999:blog-33828558866743373.post-45575272744857693832020-07-12T13:25:00.004-04:002020-09-20T09:48:43.460-04:00Broccoli Soup

<div class="p4" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px; min-height: 16px;">

<div class="p5" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 22px;">
INSTRUCTIONS
Melt the butter in a large soup pot over medium heat. Add the onions, garlic, carrots and celery and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
*I always have to do this much longer.

<div class="p6" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 21.6px;">
Add the white wine and cook until almost completely reduced, a few minutes.
*If I didn’t have an opened bottle of Sauvignon Blanc, which I don’t like, in the refrigerator I would have substituted more broth or water.

<div class="p6" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 21.6px;">
Add the broccoli, chicken broth, salt and pepper and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes.

<div class="p6" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 21.6px;">
Cool the soup for a while and then use a hand held immersion blender to purée it until as smooth as you like.
<div class="p6" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 21.6px;">

<div class="p6" style="background-color: white; color: #2d2a2a; font-family: "comic sans ms"; font-size: 12px; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: normal; margin: 0px 0px 21.6px;">Note: While I was adding this soup to my Recipe Index I saw that I had another broccoli soup there. I'm glad I found this one because even though the original of this is also a Broccoli-Cheese soup they are entirely different as far as the ingredients. I'll have to try that one again but alter it to make it more calorie conscious. It probably has more of a broccoli flavor.
