Mussels Marinara

Mussels Marinara

4 pounds mussels
1/2 cup white wine
2 Tbls olive oil
3 cloves garlic, peeled and chopped
1/2 large onion, chopped
1 28 oz can basil, garlic and oregano diced tomatoes
The following to taste:
oregano
basil
parsley
hot red pepper
salt and pepper

Clean the mussels following the step by step guide posted here. 
Place the mussels in a large pot and cover and cook over high heat until they open, about 4-5 minutes.
Remove mussels from pot and discard any that haven't opened.

Heat oil in large saucepan.  Add garlic and saute for 1 minute.  Add tomatoes, herbs and mussel cooking liquid.  Cook over low heat for 20 minutes. 

Cook pasta.

If desired, most of the mussels can be removed from the shells and added to the sauce.

Serve sauce over pasta and garnish with mussels in shells.
