Corn Flake Cookies

Kris made these when we went to visit for Claire's graduation and Larry really liked them and  I thought they tasted like pecan sandies.  I made them and Larry likes them, but I thought the ones Kris made tasted better.



CORN FLAKE COOKIES

3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
1 egg
3/4 cup cooking oil
1 teaspoon vanilla
1 cup rolled oats
2 cups crushed cornflakes
1/2 cup chopped pecans


  • Preheat oven to 325 degrees.
  • Combine flour, baking soda and salt. Set aside.
  • In a very large mixing bowl, beat butter with a mixer for 30 seconds. Add sugars and beat for another 4 minutes until light and fluffy. Add egg and beat until combined. Stir in oil and vanilla.
  • Stir in flour mixture. Add oats. Stir in cornflakes and pecans.
  • Drop by well-rounded teaspoonsful onto cookie sheet. Bake 13-14 minutes. Let stand on the cookie sheet for 2-3 minutes, then remove to wire rack to cool.
